Fishing and handling of fish

The best fishing grounds for small pelagics are located in the open Adriatic, in the vicinity of outer islands, where the sea floor is rocky, the sea crystal clean and the quality and aroma of the fish first class.
Our fishermen fish using purse seiners, at night using lights to gather the fish. After being caught the fish is removed from the sea and stored alive in tanks with a mixture of cold sea water and ice, to achieve the “shock” effect. Fish treated in this manner retains it freshness longer and may be transported fresh to further locations. After the “shock” the fish is packaged in plastic or styrofoam crates, sprinkled with ice, loaded onto refrigerated trucks and head towards their final destination.
